Featuring a 3" oven dome made from a proprietary refractory material with added poly-fibers, the Roma offers remarkable hardness and durability for long-term 24/7 operation. The 2.5" oven floor is constructed with Cordierite baking tiles, ensuring superior thermal shock resistance and excellent pizza baking.
The Roma is equipped with high-quality, thick insulation for outstanding heat retention, including a minimum of 4" to 6" of ceramic blanket dome insulation and 4" of ceramic board floor insulation. The interlocking dome design with a mono-block vent provides superior heat retention, cooking performance, and durability.
In the gas-fired version, the Roma commercial pizza oven provides a high-heat, high-throughput experience, accurately replicating a wood fire. The oven can operate in gas-only and gas/wood modes in indoor installations, with a self-modulating flame using 20,000 to 100,000 BTUs for fuel efficiency and fast recharge rates during busy periods. The Roma's stucco finish adds a beautiful, earthy touch to outdoor cafes, vineyards, and show kitchens.
