The 4-inch dome of the Modena FA commercial pizza oven is made with a proprietary refractory material that boasts a 142 pcf density and 8,230 psi strength. The material is reinforced with poly-fibers for added strength and is manufactured at our Castroville, CA factory using a two-sided, vibrated mold casting process. This hard and durable material is designed to withstand 24/7 operation for many years.
The 2.5-inch oven floor is NSF-4 compliant and constructed using large 18" x 18" x 2.5" ultra-premium baking tiles made of Cordierite, offering exceptional thermal shock resistance and durability for optimal pizza baking.
The Modena FA pizza oven features top-notch insulation, both in quality and thickness, for outstanding heat retention. The oven includes a minimum of 4 inches (side) to 6 inches (top) of high-tech ceramic blanket dome insulation and 4 inches of ceramic board floor insulation, eliminating the need for outdated vermiculite or Perlite-based insulating concrete.
The interlocking dome design, combined with a mono-block vent and fewer, tighter seams, results in exceptional heat retention, cooking performance, and durability. The gas-fired version of the Modena FA offers a high-heat, high-throughput pizza baking experience that mimics a true wood fire. The oven can operate in both gas-only and gas/wood modes, and the self-modulating flame uses 20,000 to 100,000 BTUs to save fuel and money while maintaining the desired temperature and providing fast recharge rates during busy rushes.
The Modena FA pizza ovens can be vented in multiple ways, including directly with a UL-compliant chimney system or grease duct vent, or indirectly with a Type 1 Hood that is ETL certified to UL standards.
